It’s not quite summer but we’ve had some gorgeous days here in New Mexico. This calls for a refreshing cocktail!! When you think of New Mexico, you probably think margaritas. And yes, we make a mean margarita in these parts but my favorite drink to make at home and order out is the ever-so classic gin & tonic, preferably with Sapphire gin. I think the gin tastes better because the blue bottle is so pretty.
This cocktail is refreshing, not too heavy and though I don’t recommend diet tonic water, if you’re Fitbit is going to yell at you, diet might be an option. While we’re on the subject of calories, let’s talk dessert! Sorbets are easy to make and require only a few ingredients. It only makes sense to make sorbets with *booze, right?
*Of course be sure to tell the littles this is not a treat for them

Now let’s get to the easy part. Three easy steps and five simple ingredients you probably already have if you’re a gin lover.
Keep in mind, you don’t actually need an ice cream maker for this, though they do make the job easier. Rather than pouring the ingredients into the ice cream maker, pour into an airtight container that will fit in your freezer. Whisk every twenty minutes for the first two hours and then freeze until solid. Easy peasy!
